I decided to write a book about food waste because it's a topic close to home for me. I was raised by parents and grandparents who experienced the Great Depression. My grandfathers and father gardened each summer and we also had several fruit trees in our yard. My mother canned vegetables and in general, nothing was wasted from the garden. In addition, my grandfather was a butcher, and my father often told me stories about cuts of meat, and how nothing was wasted (and taught me how to sharpen a knife). My parents were reusing and repurposing household items well before the phrase "reduce, reuse, recycle" came about. As a registered dietitian whose professional focus is on food, agriculture, and nutrition, I realized I had a unique perspective to bring to the food waste topic. Most books that focus on zero waste cooking advise a plant-based or vegetarian diet as part of the program. Over the past 15 years I've met many farmers and ranchers, and toured many farms. I realized that their real-life farm stories are often misrepresented in popular media. I decided to take a different approach: Everyone can waste less food, no matter what they choose to eat. Whether you are a vegetarian or omnivore, Zero Waste Cooking For Dummies® can help you understand where your food comes from, how to shop for it and how to store it. I also offer some simple tips for getting organized in the kitchen so you can make the most of what you have. I hope you check out this resource.
